Title: Mic recommendation for Ambient noise compensation

I am running a BSS Blu-100 with Crown CDI Amps and JBL 26CT speakers in a restaurant.  The owner complains of constantly turning volume up and down based on ambient noise from customers.  I have never used the ambient noise compensation although I have read through the manuals on how to set it up.  What the instructions don't tell me is what kind of mic is best for this purpose.
Any other pointers that would avoid the mic picking up the music as ambient noise and running away with the volume would be greatly appreciated as well.
