For those that have experience with multiple RFoF solutions (for use with radio microphone systems), what are the pros and cons of the different options on the market? Which, if any, are (more) tolerant of PC rather than APC interconnects?

As with most other aspects of this industry, and especially wireless, you get what you pay for. There's a reason the better systems are $3k+ per node as opposed to those under $1k. The biggest differences will be system noise figure, IP3 and availability of an internal optical isolator in the TX, especially if you won't be using angle polished connectors. The isolator however does not reduce the optical loss at the junction of the two straight physical contact connectors, it merely prevents the reflections from the junction mating surface imperfections from getting back to the laser and causing worse optical distortions. There's less loss at the junction of APC connectors as compared to PC, SPC or UPC.

And remember; always have an appropriate bandpass filter at the input to the fiber transmitter so as not to saturate its input stage.
