Yes, subs are mono.  And aux-fed.  And almost always placed together.

Now, if I had sufficient amps, sub cabs, auxes and snake channels I might set up a pair of subs, one on each side, just for the bottom of a Leslie with two mics on it. I don't have all that stuff nor the time to set it all up, but it sure would be fun.

You can do a stereo just fine by going to the L/R mix and avoiding subgroups completely.

I mainly just use the subgroups for group compression, like for the vocals, but in order to have a given set of instruments stereo, you'd have to devote two groups to them. For me I suppose it's not so much that I'd run out of groups but that I would need 2x the compressor channels. But I also lack the space/spare funds for an extra EQ anyway, so it's sort of a mute point.

I suppose I should ask: which instruments are you mixing in stereo and need to have group compression?

I can see a stereo group for backing vox, maybe, if you're going to pan them, which I wouldn't do.

Or maybe you're dealing with a bunch of stereo inputs from keyboards and the patch levels are all over the map, so grouping them and slapping a stereo compressor across that group could help.

Mix- mono, maybe stereo

basically what you get from me is what you need.  we do a lot of shows for nonprofit and such.  if the event doesn't need a real desk you might get a 12 ch mackie with 4- 850s a side, run in mono with one channel of  verb.  if you actually need it you might get the midas with 2 850 a side in stereo but the mix may still be mono.  i cant send out the best i have for a cut rate price and expect the next guy to pay full price.   a little off topic...but if you don't want to pay what its worth you'll get what you pay for.

This sounds similar to the Kirkendall dilemma of how to charge enough for the equipment you own versus bringing the B rig. Seems to me if you bring what you told them you would, and charge the price agreed to, you should be fine.
