I thought that if your FOH (highs/mids) are stereo left and right sides... it's best to place the subs underneath the palcement of FOH, built into the stage like you said but not placed in the center, but placed on left and right sides.  Or even if the case was, you had a center cluster, still place subs on left and right sides. (not against wall though. ( hope i make sense)

Stereo doesn't much matter for subs (Generically speaking). If you can place the subs center stage you're likely going to get smoother coverage than placing them on the sides. You also get the benefit of them coupling together.

Stereo is the last thing I'd worry about for sub placement.
