I'd use a bridged CE4000 to drive a pair of those drivers.  This will give you upwards of 1600w per driver, with minimal power draw from the AC supply

I also am in the process of building 2-18" cabs with Low Riders.  I wrote a post in the Peavey boards about the cubic feet of the enclosure and you can access it here...

The Peavey rep wrote back and it was quite helpful...just a hint.. don't confuse internal cubic feet with external cubic feet. They can be a few (cubic)feet apart when running your dimensions.
