I have a 24 channel DMX board and:
(4) Colortrack III's - 1 channel
(2) Rainbow 250's - 2 channels
(2) DJ Spot 250's - 6 channels

How would i set it up so the first 12 channels would be te the dj spots, the next four would be the colortracks, and the next four would be the rainbows.

You should be able to set the start address on each fixture, so the first DJ spot would be 1, the second 7, the first colortrack 8, etc.
