UPDATE:

For anyone interested, one gig became two (one at the 350-400 seater and one at a local cafe).

After a trial we ran with the PCC 160 on kick (On the ground approx 20cm in front of the kick).  Although not as good as a "proper" kick mic, it added enough thump that the drummer was happy and it didn't pick up too much spill from other sources (a bit of gating also helped).
Overheads ended up being a pair of AKG C 568 EB (again not the best option but what was available) which also worked suprisingly well.
Band ended up being 3 x Vox, 1 x Upright Bass, Drums, Acoustic Guitar, Electric Guitar. Keyboards ended up not coming.
Overall I was more than pleasantly surprised by how well it worked out and how the system performed ( I know that Mackie isn't everyones cup-of-tea but the S408's seem to work really well for acoustic instruments and vocals and I often get compliments about how good they sound).  As for the SRX718s cabs, so far so good.

Maybe I just got lucky that what I had on hand worked for this group but the artist was very happy (so were the audience) and said she would be in touch again next time they tour this area.
(note to ones self, look at buying a couple of "proper" drum mic's in the future so as not to induce panic attacks, lol)
