Has anyone used AES/EBU connections? If so what are the benefits or drawback from using them?

For what? I have used AES3 (AES/EBU) for years in studio situations, and some live situations. There are issues with any digital interface that you need to be prepared for, so how you are thinking of using it is important.

It's digital, so it's immune from analog noise issues such as ground issues, but susceptible to other issues related to cable length, cable type, other noise issues.  Latency may be more or less than analog depending on the implementation of the gear on both ends. Do you have a problem you're trying to solve?

No issues with analog.  Just wondering if it would sound better going the digital route.

That's the good/bad of digital. The quality of the sound solely depends on the quality of the converters.
