I would like to get for fill on the stage, the 10 par 56 cans just barely cover it. We have outlets on the walls where we plan on putting vertical light bars to hang more lights on. (see pics below) Should I go with more par cans or what else should I consider? I plan on putting additional 4 channel dimmer packs on each bar.

My own church is far from being sophisticated when it comes to lighting, but a few things that we've observed that let what we do work as well as it does:
(1} people and things often look better when they are lighted from several different angles at the same time.
(2) Therefore, lighting seems to work better when the sources are more widely separated.
(2) Following up on that thought, putting lights on the side walls can really help a lot.
Please notice that there are 3 of 4 different kinds of bulbs that you can put into a given PAR can - narrow spots, spots, normal, or wide are available for PAR56, for example. Bulbs are relatively cheap, so changing bulbs to a style that is more appropriate for the specific application is not a big expense.
