Because the show file was built around an Avid console environment?
I know when I was touring (much smaller shows, but still legit touring) I would use my X32 all the time. I would set it up at festival FOH platforms in between the Digicos and the Venues and the even a couple of Studer Vista SR's.... I had my show on my desk and it was so much easier and better to just use that low end desk than to try and set my show up from scratch every day. Add plug-ins to the mix and its double the work....

And I'll guess in a double blind listening, very very few people (if any) could tell which is which. You know your X32 and are comfortable with it. The same would be true for the person that is normally a Digico or Avid user. In my experience and opinion, the engineer and the artists determine the quality of the mix. Modern consoles make very little true difference in how an event sounds.

I've never actually touched an S6L, but my recollection is that the integration between the console and plugins (both Waves and native?) is pretty tight. For a while DiGiCo attempted to do something similar (i.e. Waves plugin UIs running on the console itself) but gave up after a while in favour of some level of communication between the console an Mutli/SuperRack running on a separate computer, which is functional but a bit clunky.
