I've been using a Lightning to Ethernet cable adaptor to connect to my XR18. Upgraded one of my iPads to iOS 15.0.1 and it will not connect.  Still connects and runs X Air on an iPad under iOS 12.5.5 and another iPad running iOS 14.8.  Ethernet appears on the iPad confirming the cable and adaptor are plugged in, but X Air doesn't connect.

Manual IP addresses on all three iPads exactly the same.

Using the XR18's built-in Wifi on the iOS 15.0.1 device does connect to X Air, and I can verify the static IP address I assigned to the XR18.

Update: doesn't work under iOS 15.1 either.

Not sure if it is related but I have been trying to help a friend to get connected the same way with both of his iPads (without any success) - just like I always did with my XR18. But like you, the iPad connects wirelessly to the mixer, but no go using the lightning adaptor. I am unsure what IOS version his are on but could be the same problem. I hadn't thought of that.

Did the switch next to the Ethernet port accidentally get switch off of “Ethernet”?  If not switch it all the way to the right then back to Ethernet and see if it resets it.

what happens if you hard wire the XR to a router and then connect the iPad to the router via the Lightning to e'net cable ?

Since iOS 14, you need to give apps permission to access the local network.

Go to settings:Privacy:Local Network and make sure network access is turned on for the Xair app.  Sometimes toggling this setting off then back on will bring it to life.

No response from X Air on the iPad under iOS 15.0.2.  I also tried connecting the XR18 to a passive 1gb switch (Netgear GS105)and then the Lightning to ethernet cable to the iOS 15.02 iPad, likewise no response.  Both methods connect just fine to the iOS 12.5.5 iPad and the iOS 14.8 iPad.

Already made this change for StageMix, but I didn't know the toggling trick, thanks.  Alas, no improvement

Update: DOES work with Belkin adaptor with charging (Lightning). This is the adaptor sold on the Apple store for $99.99.
