I've personally used 5pin DIN to XLR adapters for decades...

What kind of distances were you getting out of them?  Back when MIDI figured hugely in my life, distance seemed to be a concern.

I ran through 100-150' foot of cable routinely and probably exceeded that on more than a few occasions.  And as i said, i don't remember it EVER failing, although i never did anything super mission critical as i was certainly working WAY outside the traditional MIDI spec.

Wiring diagrams are readily available online.  FWIW, you don't need to attach the shield, just DIN 4 to XLR 2 and DIN 5 to XLR 3.

I have made MIDI cables with single core shielded cable, but with the shield on pin 4 (constant 5v source) and the core on pin 5 (data) with no connection to pin 2 which should be the shield.
All it is doing is turning an LED on and off and each end has in line 220 ohm resistors.  It's hard to imagine how it couldn't work, regardless of cable type and length.

Echoing What Brian said, Ive done same thing routinely with XLR/DIN adapters and never had a glitch. 250’ no problem.

It sounds like most of you guys are running MIDI over long distances to control something other than a sound module.  I remember having occasional stuck note issues over a 50' cable coming from a keytar.  You only need one!  A MIDI panic button band-aided the problem when playing live and I guess you can always go in and edit a MIDI note off command in post.  Are/were you running sound modules over those distances?  Apologies if I'm veering a little off topic; as he's trying to record a keyboard performance via MIDI, I thought the concern was warranted.

So I'm going to start recording the band more. Is there a way to send the raw midi from our Nord to FOH so I can record it as Midi? I'm assuming there's a network solution, but this is completely outside of my sphere of expertise.

Thanks....

Macs can pass MIDI to each other over a network.

If you need to do it down a network, use one of these at the source end, and MacOS' built-in RTP-MIDI driver or the free driver for Windows.

I use their earlier model to do MIDI over WiFi for MIDI control of devices.
