Every member of the Si lineup will expand to 80 channels. Look at the Performer 1. Mines at 48 channels with a single 32 channel stage box plus 32 channels of recording to Cubase via USB with 7ms latency. Think $6K for everything.

Like you said, a pair of X32 racks is $2k - You're gonna have huge difficulty finding a board with more than 32 channels (especially brand new) for a similar pricetag.
Behringer is already as cheap as it can get.
Second hand A&H IDR would be close, but I'm not sure what it'd be like without a surface.

Are you planning to mix all 32+ channels on an iPad simultaneously?
If not - The X32 can have more than 32 channels available on the network, it's just that it can only mix 32 (40 if you count Aux ins) at a time - But I guess you know that already.

As opposed to the "rack mount" X32 Producer or M32 Rack is the differentiation I was trying to establish.

others have already said this, but watch ebay for an A&H iLive iDR48 or iDR64.  The iLive fixed-format can mix 64 channels of full DSP to 32 buses, regardless of input count on the stage box.  Some of those owners might be moving to the shinier/sexier Dlive systems now so you might get lucky on pricing, but most I've seen included surfaces. 

Working on the iLive without a surface is OK if you can use a laptop.  Haven't tried it on a touchscreen laptop but I imagine that would be pretty great.  I wouldn't try it on tablet-only, the app is pretty limited in functionality (no scene access for instance).  I own two surfaces and one rack, and am looking for a second rack for some redundancy so you'll have to beat me in the bidding ;)

Are you trying to narrow down the choices from the hundreds of possible 40+ channel $2k rackmount digital mixers? ;-)
It's for fly-in monitor/FOH live mixing.
