I tried running "pure mono", but the stage wash and reflections mucked it up...

We're pure mono.  Stereo is great for the home, head-phones, and any place where all the guests can adequately hear both speakers (i.e coffee shop, and some bars).

Mono only. Like many before said, stereo should be left to home theater. And in my opinion, only when the audience is small enough (less than 2) so that everyone gets to sit in the sweet spot.
For background music and backing tracks, my Radial DI does the summing for me and I only use 1 channel in the mixer.

I use stereo on corporate gigs only because I may want to pan a mic like the podium mic away from a close speaker. Normally my corporates are Left, Center Fills, Right, Delays in mono

For bands I set up in Stereo but I don't think I have panned anything in over 40 years except of course cowbells.  :D

I'm so old, when I was doing FOH for Tommy Dorsey, to balance out the horn section I would slide their chairs downstage and upstage to mix!

I do my gigs much like you, Craig.  With bands I use very subtle panning unless I'm looking for a specific sonic impression like ping-pong delay or 1980s arena rock tom fills.  I try to use only enough panning to give a sense of space between sources for the recording the musos eventually will hear over ear buds.  ::)

With two electric guitars playing the same stuff, I like to pan those out a little. Makes it easier to mix, and the audience won't notice.

I route all vocals to a single sub channel, which is then routed equally to LR mains.
Then I can either adjust the independent LR as needed, or pan the sub channel to 1 side, but the signal is still pure mono. L and R get the same feed.
Like the time  I DJ'd a corporate gig and the MC insisted on standing directly in front of the left main with the wireless handheld mic.
