+1 on the Raspberry Pi, they are very handy. 

Any old computer can run Linux without installation using a Live CD.  I am a Redhat guy so CentOS Live is my go to.

The 'any old computer' I have ready access to is a MBP with no CD drive. That being said, I've looked up how to do a USB install on it and it looks really straightforward, so I'll give that a try.

I'll be in the shop some time next week and can hook up some Dante things and give you something to look at. I'll keep you posted.

Great it sounds like fun.  Set it up with a static IP on your network (make sure it's outside the range of your DHCP server).

With the static IP you can go into your router and open up port 22 to the Internet.  I will then be able to login to the system remotely.
