I've seen a few concert videos from the 70's where the drum kits were all miced up with 441's with maybe the exception of the kick.

My 441 never gets close to a drum kit, I'll break it out the occasional vocal or horn mic.

I've been lucky enough to try that on a couple of occations - MD441 on snare and all the toms.

It sounds really good.
Not a budget option, but once a while you get to have a little fun at work.

In early years i worked for a soundco that did the drums with 441's and 421's.
Of course, a 57 or 2 on snare.
Sounded great, but those freakin 421 mic almost-clips.............
and the 441 "holders" I always thought were an after-though. Not part of the original design.

But, you couldn'y argue with the sound.

Ya, Whatever. Just throw a '57 on it, and get off my stage.

As a dealer I always felt the 421 & 441 clips were a source of revenue for Sennheiser...oh..GA3's too

You can put a small black zip tie thru the slide button on the the 421 clip that prevents it from unclipping. I did that to all mine.

It sounds like you're not getting the attack you want because you're having to compress the snare input channel so much due to the varying dynamics of the player.  If you can do some parallel compression I would recommend that.
As for a snare mic, I like the Audix i5.
Also, for your headroom issue, you might want to try a Cloudlifter CL-1 on your SM57.  It will boost the headroom of that mic significantly and give it a bit of a different tone.  At the Hollywood Bowl they are using Cloudlifters on almost all of the dynamic mics they use when micing up the Hollywood Bowl Orchestra.
