I individually mic all the strings, as well as the woodwinds.  They need it to compete with the brass section.  If I had a 3rd Microboom I'd be using it, but i can't justify the cost for once or twice a year when there's this many singers.

That (brass section volume) is a job for the conductor.

A few years ago I invested in a pair of large "studio boom" stands which will work from behind a choir, reaching out about 10' or just far enough to get a pair of nice SDC's to pick up a good portion of a choir like yours.  Another mic or pair in the front and you're good to go.
