I have a Chauvet HZ-1000 (discontinued) hazer that I'd like to control with a wireless remote. Does anyone know if the remotes listed on their site would work? OR is there another option? I don't want to tie up 2 DMX channels for it if I don't have to. I've got a call into them but they haven't gotten back to me.

As far as I can see the wireless and wired controllers should work. 
Do you have connectors like this on the rear?

Yes, it has DMX and a 5 pin DIN..

I've found the manual for the hz-1000 hazer and it refers to a "Socket for Remote Control"  which is for the out of production FC-4HS Timer remote.    I have no idea if the current remote models would work :/  Sorry wish I could help more
