So, just so we're clear - However remote the chance of lighting is, earth grounding a portable genny and metal stages can help protect everybody on site, our gear, other folks gear, and even the talent... Is there a valid reason that one wouldn't want to insist on it?

Jeff,
There is no more to an earth ground than this.  All current leaving a source must return to it.

Since the earth itself is not the source of a generated AC or DC current it can not be the point to which that current returns. 
Only by bonding an earth ground to a neutral or other return path to the source can current flow back to the source thus making a complete circuit.   
The earth ground could be a part of the return to neutral, part of the path, but an earth ground can not be the destination of the electrons since they did not originate there.

Furthermore, no matter what "they say" a generator or any electrical device, can not discharge current to an earth ground.  An earth ground is not a part of the safety of the generator except in the case of lightning strike or the very unlikely event of an incredible static discharge where the earth itself is a part of the circuit in question.
