Rent a circular truss and use stretch screen material.

Would you happen to have a suggestion on the material (aside custom ordering a surface)?

White Spandex, or talk to a professional AV supplier about what they use.

+1 for Mac's suggestions.

If you have a copy of "The Automated Lighting Programmer's Handbook" by Brad Schiller, Go to pages 187, 189 and 191, They are using 2 large Circular Trusses as the frame for the projection screens and also hanging 6 moving fixtures from each truss.
