A few Amsterdam gems:

Foodism, just west of the Multatuli statue on Oude Leliestraat, very near Jordaan:

To the east, the cafe in the Kriterion theater complex, just across Roeterstraat from UvA:

Kriterion is hard to beat for cheap beer, cheap sandwiches, and unlimited people watching.

For beer, I like Cafe Gollem on Raamsteeg, just off Spui.

At any time they will have well over a hundred Belgian brews, some in very small quantities, all written on the chalkboard.  It's very small, and very intimate.  You can get a cheese sampler plate as well.

While you're in the Spui area, get the finest chips (frites, fries, whatever... :-) just around the corner at Voetboogstraat, just off Kalverstraat.

Sam's Sushi- 200 4th Ave N.  
around 4th and Church st.

One guy runs/cooks the whole thing.  The rolls are HUGE and cheap (around $2.50) and Sam is a cool guy.  He actually won't except tips.

Probably the best sushi I've ever had

Other than that my fave restaurant in the world is a little Indian restaurant in Amsterdam called Balti House and can be found at 41, Albert Kypstraat. Is a short walk from the Paradiso and Milkweg and WELL worth a visit.

Sadly my schedule never lets me get far from the gig.

When working at the Convention Center downtown I've grown fond of the Down Home Diner in the Reading Public Market.


There's a cheesesteak place in the market too, but it's just okay IMO, not much better than the place on Lakeshore Avenue in Oakland.

Grizzly Grill, next to the Alehouse and across the street from Stages, affiliated with both venues so you can usually get them to cover your dinner and a beer if you arrange it in the advance. The ostrich steak is unreal!
