Does anyone know of a course on Cinema design.

Primarly looking for surround sound placement, product and processing.

If it it also touched on video / film it would be great as well.

I don't think I've seen any courses directly addressing commercial cinema venue or systems design, however there are numerous cinema audio related resources available online from JBL, Dolby, the Digital Cinema Initiative, AES (for example http://www.aes.org/technical/documents/AESTD1001.pdf) and others.  There is also a cinema operations and technical forum at http://www.film-tech.com/ubb/firstaccess1316471473.html.
