Can and Dec

I am a student going to record a Chapel choir for the first time. We have a can and a dec side. so we are positioned right opposite each other. Any tips how to records this?
The obvious thing is to put a mike in the middle. But should it be a stereo in the middle? Or a cardioid on the floor? Or a stereo further down in the Chapel? Or would that give too much of a re-verb to cope with.

BTW - what are "can" and "dec" ?
