Could do what they used to do with the original "KeyTar" (before there was a keytar) .... the FOH would get on the talkback mic and fake the part more often than the keyboard wireless would work ...

Hung notes on wireless midi shouldn't be an issue, all the good systems detect a dropout and send a note off/panic message. The now discontinued cme widi does.
