M7 has dedicated scene store and recall buttons on the surface. You don't need to use a UDK for these features on M7.

Depends on what you need. There's no dedicated "Next" button, nor any dedicated direct-recall buttons.

No next button, but you can navigate the scene memory list with the up and down buttons, and push "recall". Recall confirmation can be turned on/off.

Yes, but that would be way too slow for a Broadway-style mixer. Those shows need a dedicated "next" button, as close to the VCAs as possible.

Yes, you can set any of the UDKs to act as  a direct scene plus or minus.  I use them all the time for theatrical events.... saves a few button pushes.

Go to the Setup page, then select Preferences --> User Define Keys.

Touch on the UDK Icon, and the options you want are under the "SCENE" category.  INC Recall goes up one scene, DEC Recall goes down one scene.
