I think for budget sake I'll stick with the USG & Ubiquiti switch.

I'll definitely keep in mind a used IoS switch :) Love me some SecureCRT
Oh man SecureCRT is so 2005,. The cool kids use MobaXterm.  Tabbed interface, real shell with Rsync, Xterm support allows you to run Xapps on the remote system right on your Win desktop.  Slicker than horse snot.

No, it was a "shareware" service - https://dns.watch
Amazon Route 53 is the most reliable DNS in the world.  The API is slick too.

When we provision a VM and set the hostname the A record is created in route 53.

WRT the subnet question.  Use /24 subnets for users and the /8 is your summary. 

Run 802.1q vlan trunking to the AP's and a VLAN for eash SSID + 1 for MGMT.

Is there any sort of ip standard for separating guest traffic and staff traffic?

Like I know larger corporations are on 10.0.0.1 255.0.0.0

I know of 172 and 168 as well.

I'm thinking of 192.168.1.1 255.255.255.0 for the staff/business.

But what about the guest Network?

Easiest way:

Guest: 192.168.0.0/22 (subnet 255.255.252.0), which gives you a range from 192.168.0.1 -  192.168.3.254.

Business: 192.168.4.0/24 (subnet 255.255.255.0)

Admin: 192.168.100.0/24 These are the IP adresses for your ubiquiti stuff.

Also tag your business network to a separate vlan.

Vlan 100 for MGMT/admin
Vlan 50 for guest
Vlan 10 for staff
Default vlan 1 for gateway
