Or a/(my own) recording studio.


ETA: Actually, my dream gig was always to be a successful, full time working saxophone player/teacher. I failed at that one.  :'(

Your restaurant should be named "Smoke Sax BBQ" and feature horn-based music.  I can foresee lots of Memphis Horns...

You can train cooks or players between lunch and dinner rush.

It's barbecue, not BBQ. And I cook in the Texas barbecue style, not Memphis.


I always wanted to have a blues and barbecue joint when I was growing up. Now, after working in live production, I'd settle for just the restaurant part with a juke box in the corner playing blues and old rock and roll at a conversational volume.
