I would recommend a test and practice to help set the levels for some shows.  That way the engineer knows what to expect on the recording.  I was able to record my room mics to a single channel along with a stereo input and one for the MC vocals.
4 channel on M-audio Quattro to a laptop in Audacity as my test setup. 

I use two presonus blue compressors as limiters to the M-audio to ensure no clips on digital.

So to add the side mic (figure 8) on the mixer you want to look at this.

set the mic to one channel as shown panned left, and the same to a second channel as inverted polarity and panned right.
Using the figure 8 on M/S is a good thing but to use the rear channels as ambiance does not require the mic to be figure 8.

With good mic placement you can largely avoid having to actively mix them. I'm doing it right now.

Any ideas on how to learn this? Any tips or guidance? Trial and error?

My live recordings tend to be terrible, multi-tracked or ambient.

Also, one room I am in (church sanctuary) is very dry (too much absorption). Is strategically placed artificial reverb the only option in this case?
